Introduction

Rhubarb(Rheum rhabarbarum) is a species of plant in the family Polygonaceae. It is a herbaceous perennial growing from short, thick rhizomes. Its roots and stems are rich in anthraquinones, such as emodin and rhein, and its rhizomes contain stilbenoid compounds (including rhaponticin). Rhubarb also contains the flavanol glucosides (+)-catechin-5-O-glucoside and ()-catechin-7-O-glucoside and carbon-based quinone molecules which are capable of carrying an electrical charge.
